Berry flapjacks with honey, mascarpone and toasted almonds

Flapjacks are not just for energetic young children. 







    1 bag   SASKO Flapjack Bake Mix
  30 ml    vegetable oil
     2         extra large eggs
500 ml   milk
                vegetable oil for frying
150 g       blue berries
150 g       Cape gooseberries
250 g       mascarpone cheese
100 g       flaked almonds
200 ml    honey



  • Beat oil, milk and eggs together in a mixing bowl with a whisk.
  • Gradually add the flapjack mixture to the egg mixture and beat thoroughly with a whisk until lump-free.
  • Spoon mixture with a tablespoon onto a hot, well-greased frying pan. Turn halfway through the frying process and fry until golden brown.
  • To serve, pile 3 flap jacks on top of each other, add dollops of mascarpone, scatter with blueberries and gooseberries, drizzle with honey and sprinkle with toasted almonds.
