Featured Recipes from the Global Flavours Cookbook

1. Greek Moussaka Casserole

Ingredients:

• 2 large aubergines, sliced lengthwise
• 500g minced lamb or beef
• 1 onion, finely chopped
• 2 cloves garlic, minced
• 2 tomatoes, diced
• 2 tbsp tomato purée
• 1 tsp dried oregano
• 1/2 tsp ground cinnamon
• Salt and black pepper, to taste
• 1 cup Nuts About Cooking Coconut Oil, for frying
• 1 cup grated Parmesan cheese
Béchamel Sauce: 4 tbsp unsalted butter, 1/4 cup all-purpose flour, 2 cups milk, pinch of nutmeg, salt and black pepper, 2 eggs, beaten

 

Method:

1. Preheat the oven to 180°C. Grease a baking dish with Nuts About Cooking Coconut Oil.
2. Fry the aubergine slices in coconut oil until golden brown. Set aside.
3. Sauté onions and garlic in the same skillet, add minced meat and cook until browned.
4. Stir in tomatoes, tomato purée, oregano, and cinnamon. Cook until thickened.
5. Prepare the béchamel sauce by melting butter, stirring in flour, and gradually whisking in milk until thickened. Season and whisk in beaten eggs.
6. Layer half the aubergine in the baking dish, spread meat mixture, top with remaining aubergine, and pour béchamel sauce over it. Sprinkle with Parmesan.
7. Bake for 45-50 minutes until golden and bubbly. Let cool slightly before serving.

2. Sweet and Sour Pork

Ingredients:

• 500g pork loin or shoulder, cut into bite-sized pieces
• 1 cup pineapple chunks
• 1 onion, cut into wedges
• 1 red bell pepper, cut into chunks
• 1 green bell pepper, cut into chunks
• 2 cloves garlic, minced
• 2 tbsp Nuts About Cooking Coconut Oil, for frying
• Salt and pepper, to taste
Marinade: 2 tbsp soy sauce, 1 tbsp Chinese rice wine, 1 egg, 1/4 cup corn starch
Sauce: 1/2 cup ketchup, 1/4 cup rice vinegar, 1/4 cup brown sugar, 1 tbsp soy sauce, 1 tbsp corn starch, 1/4 cup water

Method:

1. Marinate pork with soy sauce, wine, egg, and corn starch for 30 minutes.
2. Mix sauce ingredients in a bowl and set aside.
3. Fry marinated pork in hot coconut oil until golden and crispy. Drain on paper towels.
4. Stir-fry garlic, add pineapple, onion, and peppers until tender.
5. Return pork to the skillet, pour sauce, and stir until thickened. Serve hot.

3. Lamb Rogan Josh

Ingredients:

• 500g lamb, cut into bite-sized pieces
• 2 tbsp Nuts About Cooking Coconut Oil
• 1 onion, finely chopped
• 2 tomatoes, puréed
• 2 cloves garlic, minced
• 1-inch ginger, grated
• 2 green chillies, split lengthwise
• 1 tsp cumin seeds
• 1 tsp coriander powder
• 1/2 tsp turmeric powder
• 1/2 tsp Kashmiri red chilli powder
• 1/2 tsp garam masala
• Salt to taste
• Fresh coriander leaves, for garnish

Method:

1. Heat coconut oil, splutter cumin seeds, sauté onions until golden.
2. Add garlic, ginger, and chillies, sauté for another minute.
3. Brown lamb pieces, add spices and cook well.
4. Add tomato purée, cook until oil separates, add water for desired consistency.
5. Simmer covered for 30-40 minutes until lamb is tender. Garnish with coriander before serving.
