Malva pudding
Malva pudding is a favourite South African dessert. It’s perfect for a large get together because it’s so easy to make. The best part about this sweet, spongy pudding is the delicious sauce that is poured over the hot pudding.
The sponge is a straightforward recipe, but you can get really inventive with different sauces. We’ve provided a traditional sauce for this recipe, but you can substitute the orange juice for something like naartjie or chocolate.

Ingredients
Sponge
1 cup castor sugar
2 eggs
1 tsp apricot jam
1 1/4 cups cake flour
1 tsp bicarbonate of soda
Pinch of salt
2 tsp Sunshine D Original Margarine
1 tsp vinegar
1/2 cup milk
Sauce
1 cup cream
115 g Sunshine D Margarine
100 g sugar
1/2 cup water or orange juice
Method
Sponge
- Preheat the oven to 180oC. Sift all the castor sugar, cake flour, bicarbonate of soda and salt in a bowl. In a separate bowl, beat the eggs until light and fluffy, and then beat in the jam. Melt the margarine in a saucepan on the stove, and then add the vinegar and milk. Add the dry ingredients and Sunshine D Original Margarine mixture to the egg mixture. Mix until well blended. Pour into an ovenproof dish and bake for 30 minutes.
Sauce
- In a saucepan, combine and melt the cream, Sunshine D Original Margarine, sugar and water or orange juice on the stove. Pour over the sponge when it comes out of the oven.
The dessert is best served with cream, ice-cream or custard.
