Nutritional fillings in Baking
The consumer desire for nutritionally-balanced baked goods has propelled many a producer to look to fibre-rich foods such as nuts and grains, along with fresh and preserved fruit fillings.
The increasing consumption of baked goods, desserts, yoghurts containing fruit is clear for all to see.
The growing trend in fruit preparation production is a focus on wellness and health with high-quality spreads and fruit snacks that taste natural and homemade, and contain more fruit, less sugar and fewer additives.
Fruit favourites in the baking category include apple, peach, pear, cherry, banana, blueberry, cranberry, raspberry, strawberry, orange and lemon. Tropical fruits, however, are fast gaining appreciation.

Considering the significant emphasis on health foods, it comes as no surprise that many of these fruits fit in the category of “superfoods”.

Grains and nuts

They are also very fruit-friendly because many ancient grains provide robust flavour and texture. Fruit can help mellow and round out these attributes.
Blueberries, for example, are synergistic with oats, amaranth, buckwheat, chia, millet, quinoa, sorghum, teff, Kamut, farro and spelt, and are also very compatible with nuts and seeds.
Cherries
Bakers are encouraged to think beyond the traditional fruit garnish and to experiment with more creative applications, adding crushed maraschino cherries into a cream cheese frosting for a swirl of colour and flavour.
Citrus
As for citrus notes, they add a refreshing flavour punch to everything, especially when paired with creamy dairy flavours. Adding clementine orange, for example, to cake crumb or frosting can elevate the ordinary to the exceptional.
Plums
Dried plums, have long been used in European-style pastries such as Danish and whole grain breads. Dried plums have been the inspiration for countless new and interesting culinary applications in some of the world’s top bakeries.
The ingredient is not only a cost-effective solution to add taste and texture to baked goods, but dried plums also reduce sugar, fat content and calories while adding fibre, making them ideal for healthier baking. They also provide moisture retention that works wonders on hearty grains and gluten-free applications.
In some applications, dried plums are used as a characterising ingredient, while in others, use is more functional. For example, in fruity bread or scones, diced dried plums provide flavour, much like other dried fruits.
Berries
Berries are a flavour of choice for consumers around the world – a trend that drives an openness to experiment with lesser-known varieties.
Cranberries are marked as one of the so-called “superfruits” due to the nutrient content and antioxidant qualities. Cranberries can be used as a topping, in pancake and beverage syrups, fruit spreads, yogurt fruit preparations, and ice cream or frozen yogurt varieties.
